Ingredients
500g rump or sirloin steak
2 baby gem or romaine lettuce broken in half
1 large tomato, halved and sliced
half a red onion, halved and sliced
1 tbsp black & white sesame seeds, dry roasted
20g radishes, thinly sliced
10g picked fresh coriander
5g fresh mint leaves
3tbsp rapeseed oil
For the marinade
Your choice of medium-hot red chilli, roughly chopped or thinly sliced
2 cloves garlic, roughly chopped
Juice of half a lime
3 tbsp dark soy sauce
2 tbsp Wonderchup
1 tsp freshly ground black pepper
For the dipping sauce
Juice of half a lime
2 tbsp coarsley ground black pepper

Method
- Cut the beef into thin strips and place in a bowl. Add the chilli, chopped garlic, ginger, lime juice, soy sauce, Wonderchup and black pepper.
- Leave to marinade for 20 minutes
- arrange the lettuce leaves, with sliced tomato equally shared amongst them and sprinkle half the sesame seeds and coriander around a nice serving place or board.
- Make the dipping sauce with the remainder of the lime juice & pepper - place this in a bowl in the centre of the plate with star anise.
- Heat the oil in a pan, and when smoking take the beef out of the marinade and add to the pan. Keep stirring for 3-5 minutes depending on how you like your beef cooked. Put the beef in the lettuce shells and put the remainder of the marinade in the hot pan and reduce for a few minutes, then pour over the beef and lettuce.
